Ingredients Serving: 4

  1. CHOCOLATE RAVIOLI: flour 1/2 cup
  2. Cocoa powder 2 tbsp
  3. Powdered sugar 1 tbsp
  4. Flaxseed gel 2 tbsp
  5. Water 2-3 tbsp
  6. Butter 1 tbsp
  7. CHOCOLATE CANNOLI FILLING: paneer 1/2 cup
  8. Mawa/khowa 1/4 cup
  9. Powdered sugar 2 tbsp
  10. Cocoa powder 2 tbsp
  11. Chocolate essence 1/4 tsp
  12. CHOCOLATE STRAWBERRY SAUCE: strawberries 1 cup
  13. Sugar 1/4 cup
  14. Cocoa powder 1 tbsp
  15. Water 2-3 tbsp

Instructions

  1. TO MAKE FLAXSEED GEL : ADD 1 TBSP FLAXSEEDS & 1/2 CUP WATER IN A SAUCEPAN, BRING TO A BOIL
  2. TAKE OFF HEAT ONCE IT STARTS BOILING
  3. STRAIN IMMEDIATELY, ALLOW IT TO COOL
  4. FOR THE CHOCOLATE CANNOLI FILLING : ROAST 1/4 CUP KHOYA FOR 4-5 MINS TILL IT SOFTENS
  5. ADD 1/2 CUP CRUMBLED COTTAGE CHEESE
  6. ADD 2 TBSP COCOA POWDER & 1/4 TSP CHOCOLATE ESSENCE, STIR FOR 1 MINUTE, TAKE OFF HEAT
  7. ONCE THE MIXTURE COOLS DOWN, MIX 2 TBSP POWDERED SUGAR
  8. SHAPE INTO OVALS
  9. PLACE IN THE FRIDGE FOR 45 MINS TO SET
  10. TO MAKE THE RAVIOLI DOUGH : TAKE 1/2 CUP FLOUR
  11. ADD 1 TBSP POWDERED SUGAR, ADD 2 TBSP COCOA POWDER
  12. NOW CHECK THE FLAXSEED GEL, IT SHOULD TURN STICKY LIKE THIS
  13. ADD 2 TBSP EACH OF FLAXSEED GEL & WATER, KNEAD INTO A SEMI-STIFF DOUGH
  14. ADD 1 TBSP BUTTER TO THE DOUGH, KNEAD AGAIN, COVER & SET ASIDE FOR 20 MINS
  15. TO MAKE THE CHOCOLATE STRAWBERRY SAUCE : COOK 1 CUP STRAWBERRIES, 2 TBSP SUGAR, 1 TBSP WATER
  16. ADD 1 TBSP COCOA POWDER, COOK FOR 1 MINUTE, TAKE OFF HEAT
  17. ROLL OUT THE READY RAVIOLI DOUGH INTO THICK ROUNDS
  18. PLACE THE CHOCOLATE CANNOLI FILLING IN CENTRE, MOISTEN THE SIDES WITH WATER
  19. CAREFULLY PLACE ANOTHER ROUND ON TOP, LIGHTLY PRESS TO SEAL THE EDGES
  20. TRIM THE EXTRA DOUGH TO MAKE NEAT SQUARES LIKE THIS
  21. BRING A LARGE POT OF WATER TO A BOIL & GENTLY DROP IN THE RAVIOLIS
  22. THE RAVIOLI IS COOKED WHEN IT FLOATS TO THE SURFACE, IMMEDIATELY REMOVE & DIP IN COLD WATER
  23. TO SERVE : PUT SOME CHOCOLATE STRAWBERRY SAUCE, PLACE SOME RAVIOLIS
