ABOUT Dhokli with Tuvero or Adzuki beans RECIPE

Dhokli is a comfort food after a long day's work. It's almost like Indian Pasta because it has fresh dough cooked in water and we can make a lot of variations with this.

Ingredients Serving: 3

  1. 1/2 cup Tuvero/Adzuki beans soaked overnight
  2. 1 cup whole wheat flour
  3. Water 3 cups and more
  4. 2 tsp red chilli powder
  5. 1 tsp + 2 tsp turmeric powder
  6. 3 tsp powdered sugar
  7. Salt to taste
  8. 2 tsp ajwain/carom seeds
  9. 2 tsp ginger green chilli paste
  10. 1 tbsp + 2 tbsp oil

Instructions

  1. Boil the beans in 1 cup water, plus the water it was soaked in. Cook it till 2 whistles blow then 15 minutes on a medium flame. They should become soft but not mushy.
  2. Knead the dough with wheat flour, 1 tbsp oil, ajwain, red chilli powder, 1 tsp turmeric powder, salt and powdered sugar. Make it into a tight dough like we make for pooris . Keep the dough covered and put it aside for 20 minutes.
  3. In a wok, heat 2 tbsp oil, add the ginger-green chilli paste and 2 cups of water. Put the turmeric, salt and red chilli powder. Bring it to a boil. Reduce the heat to low.
  4. Add the boiled beans and let the water simmer. Make 4 balls out of the dough. Roll it like a chapati, apply some oil on the top and cut it in squares or diamonds shapes.
  5. Add them to the water and let it cook. Repeat it until the whole dough is over. Stir occasionally. The dough will float and the sauce shall thicken. Add some water if need be. Do not let the dough go clumpy.
  6. Serve with rice or as it is with some sesame oil on top.
