Take bowl and add 1cup gram flour and semolina in it then add water and mix the mixture properly.avoid lumps
Then add sugar and citric acid in it and mix it well
Then add baking soda and oil and mix well. Now our batter is ready.
now,pour batter immediately into each greased plate and fill it up to 1/2 inch thickness
Then place it in steamer for 10-12 min.Then insert knife or spoon in it and and check whether it come clean or not if it does then it is ready if not cook for 2 min
After that remove the plate from stemer and cool it for few min. Then cut fluffy khaman with knife into small square
For Tempering- take 1 tablespoon oil in small pan and heat it for few second. Then add 1 tablespoon mustard seeds when seeds began to crackle add 1 tablespoon asafoetida and green chillies according to your taste ,add some cury leaves after few seconds and let it cook for few seconds in high flame
our Tempering is ready and pour it over khaman and toss gently until each dhokla is coated well.
