ABOUT Methi and Kansaar Muthias RECIPE

Muthias are steamed and stir fried dumplings. They are made in a lot of ways. My favorite one has cracked wheat, methi leaves and yogurt.

Ingredients Serving: 4

  1. 1/2 cup kansaar/cracked wheat/bulgar
  2. 1 cup chopped methi/fenugreek leaves
  3. 1/2 cup + 2 tbsp yogurt
  4. Salt to taste
  5. Ginger and green chilli paste
  6. 3 tbsp oil
  7. 1 tbsp sesame seeds

Instructions

  1. In a pan, mix the wheat, methi, salt, ginger green chilli paste and yogurt. Add 1 tbsp oil as well. Mix it well and note that it should be of a nice and soft consistency. If it feels dry, add some water/yogurt.
  2. Heat the steamer. On an oiled plate, add the muthias in logs and cook them for 20 minutes or until they are done. They will look firm on the outside and when you insert a knife in the center it shall come clean.
  3. Take them out of the steamer, cut them once they cool down a bit.
  4. In a wok, heat 2 tbsp oil add the sesame seeds and the muthias. Let them get crisp on the sides on a low medium heat.
  5. Serve them with love.
