Ingredients Serving: 4

  1. ¾ cup rice, wud suggeat basmati rice
  2. 3 tablespoon ghee
  3. ¾ cups water
  4. 4 small cardamoms (choti elaichi)
  5. 4 cloves (laung)
  6. 15 to 20 raisins (kishmish)
  7. 120 grams jaggery (gur)
  8. ¾ cup water
  9. Few cashewnuts for garnishing

Instructions

  1. First, take the jaggery and soak it in 3/4 cup water for 30 to 45 minutes.
  2. Clean and wash the rice & soak the rice for 15 to 20 minutes.
  3. In a pressure cooker add the rice and 3/4 cup water.
  4. Pressure cook for 2 to 3 minutes. the rice should be half cooked. Once the pressure settles down, open the cooker lid.
  5. Stir them gently in cooker itself.
  6. Add the jaggery dissolved in water plus the oil ,stir it gently with the half cooked rice.
  7. Add the cardamom, cloves, raisins .
  8. Stir this too gently with the rice mixture.
  9. Close the cooker with the lid and pressure cook again for 2 to 3 minutes.
  10. Garnish the cooked jaggery rice with cashew , raisins etc. Dry fruits of your choice.
