Mint flavoured Khandvi

Ingredients to make Mint flavoured Khandvi

  • gram flour 1 cup
  • yogurt 1 cup
  • water 2 cup
  • ginger paste 1 tbsp
  • Green chilli paste 1 tsp
  • mint chutney 2 tbsps
  • salt to taste
  • turmeric powder 1/2 tsp
  • oil 4 tbsps
  • mustard seeds 1 tsp
  • coconut ( scraped) 2 tbsps
  • Green chilli slit 4-6
  • curry leaves 8-10

How to make Mint flavoured Khandvi

  1. Bring a bowl,sive the besan.
  2. Add yogurt and 2 cups of water.
  3. Add ginger paste,green chilli paste,mint chutney,turmeric powder and salt.
  4. Mix this well without any lumps.
  5. Grease the reverse side of a few thalis or marble tabletop.
  6. Take a non-stick kadai,pour the batter and cook this on low flame.
  7. Cook this mixture till it thickens into a thick batter.Stir constantly.
  8. Off the flame and quickly spread the mixture over the greased thalis as thinly as possible while the batter is still hot.
  9. After 5 minutes,roll the layers and cut into 2 inch pieces.
  10. Heat oil,add mustard seeds,when they crackle,add curry leaves,green chilli slits and coconut scraped.
  11. Pour over the pieces.
  12. Garnish with mint sprig and serve.
