About Paneer Sugiyan Recipe

Sugiyan is kerala dish where moong dal pooran will be dipped in maida batter and fried in oil.It is famous tea time snack in kerala. I have used paneer stuffing instead which is easier to make in no time. We can keep urad dal batter ready in refrigerator and this healthy receipe will be a hit with kids too..

Paneer Sugiyan

Ingredients to make Paneer Sugiyan

  • paneer -1 cup
  • jaggery-3/4 cup
  • coconut grated -2 tablespoons
  • cardamom powder-1/2 teaspoon
  • ghee - 2 teaspoons
  • urad dal- 1/2 cup
  • Channa dal-1 tablespoon
  • Raw rice-2 tablespoon

How to make Paneer Sugiyan

  1. Wash and soak urad dal, channa dal and raw rice together in water for 1 hour
  2. After an hour drain the water and grind into smooth batter in mixie.Consistency should be like idly batter
  3. Now in kadai add jaggery with little water and heat it and when the jaggery dissolves completely in water, strain it to remove impurities
  4. Add the jaggery juice again in pan and heat it.whenbit starts to boil add grated paneer ,ghee, coconut and cardamom powder and stir continuously until it thickens and leaves sides of pan.
  5. Let it to cool off and make small balls out of the pooranam and keep it in a plate
  6. Heat oil in kadai dip the pooranam in urad dal batter and fry in medium flame until golden brown.
  7. Serve hot

My Tip:

We can dip the pooranam in thick maida batter and fry if we have no time to grind urad dal batter but serve it hot.
