ABOUT Maharashtrian Traditional Khaproli RECIPE

Khaproli is Maharashtra famous traditional dish. Khaproli (खापरोळी ) is a sweet dish, highly popular in southern Konkan. The dish consists of a fluffy pancake dipped in yellow / White sweet Coconut juice / Milk.

Ingredients Serving: 4

  1. Parboiled Rice: 2 cups.
  2. White Rice: 1 cup
  3. Split Bengal gram: 3/4 cup
  4. Split Black gram: 3/4 cup
  5. Fenugreek Seeds: 1/2 tsp
  6. Oats: 1/2 cup (Optional)
  7. Green Cardamom Powder: 1/ 2 tsp.
  8. Jaggery: 1 cup
  9. Coconut: 2 cup (Greated coconut for milk)
  10. Jaggery: 3/4 cup for coconut milk
  11. Salt : as per taste
  12. Turmeric Powder: 3/4 tsp.
  13. Water: As required
  14. Soda: 1/4 tsp

Instructions

  1. Soak par boiled rice, White Rice, Split Bengal gram, Split Black gram, Fenugreek Seeds in 5 different pots for 3 hrs.
  2. Add the soaked and drained parboiled rice to the wet grinder. Add 1/2 cup of water into this ( make the Fine paste).
  3. Remove rice mixture from mixer jar. After Add other ingredients ( Soak and drained: White Rice, Split Bengal gram, Split Black gram, Fenugreek Seeds), Oats and grind well ( Fine paste). Add Jaggery in the mixer jar and blend for another 1 or 2 mi
  4. Remove all grind mixture in big Jar or Pot. Add Turmeric Powder, Soda and mix well. Cover and let it ferment for 7- 8 hrs.
  5. After 7-8 Hrs better mix well, add 1/2 cup water and Salt - as per taste in better.
  6. Heat a pan, Take a ladle full of batter and pour in the center of the pan. Use the back of the ladle to gently spread the batter in circular motion. Cover it. after 2 min. remove Khaproli on the pan.
  7. Make Coconut Milk: grind grated coconut and strain. Add Jaggery, Green Cardamom Powder into Coconut milk (If you want yellow colour add a pinch of Turmeric). Mix well until Jaggery dissolved.
  8. Khaproli deep in coconut milk for 2-3 min.
