ABOUT Thukkada RECIPE

Thukkada is a traditional snack made with maida. I always make it with whole wheat flour adding the cream of curry leaves,ginger and green chillies. This crispy , crunchy snack can be made easily in large lots and stored for longer time.

Ingredients Serving: 10

  1. Whole wheat flour 300 gms
  2. Salt to taste
  3. Ghee 2 table spoons
  4. Cumin seeds 1 full tea spoon
  5. Green chillies 4
  6. Ginger piece peeled and washed a piece of 2 inches size
  7. Hand full of curry leaves washed
  8. Oil for frying

Instructions

  1. In a broad bowl add the flour, ghee, cumin seeds and salt. Mix well with fingers.
  2. In a blender add green chillies, curry leaves, ginger and grind to coarse paste with water.
  3. Add the paste to the flour mix. Pour water little by little and knead to soft dough like roti dough as shown in the figure.
  4. Take a big lemon size ball and roll to thin roti dusting some wheat flour. With a knife cut them to diamonds. Spread them on a kitchen towel or plate
  5. Repeat the process witht he rest of the dough too .
  6. Heat a pan with oil. Once well heated, drop hand ful of the pieces in tot he oil and fry till becomes crispy and brown
  7. Store in air tight box.
