Ingredients Serving: 4

  1. Potatoes 1 kilogram
  2. Kuttu flour 250 gram
  3. Watercashew nuts flour 200 gram
  4. Sweet potato 500 gram
  5. Bottle guard 500 gram
  6. Green chillies 4 ..5
  7. Coriander leaves
  8. Cucumber 250 gram
  9. Curd 400 gram
  10. Roasted cumin seeds powder 1 teaspoon
  11. Rock salt according to taste or 3 teaspoon
  12. Pepper powder 2 teaspoon
  13. Coriander powder 2 teaspoon
  14. Cumin seeds 1 teaspoon
  15. Dry fruits to garnish halwa
  16. Pure ghee 8 tablespoons
  17. Oil for frying poories

Instructions

  1. First boil potatoes and peel them
  2. Keep 4 boiled and peeled potatoes for poori dough and rest for curry
  3. Put a pan on medium heat
  4. Add 2 tablespoons ghee in it
  5. Add 1/2 teaspoon cumin seeds in it
  6. Add coriander powder and 1 teaspoon pepper powder
  7. Add 1 glass of water
  8. Add coarsely crushed boiled potatoes in it
  9. Add 1 teaspoon salt
  10. Cook for 5 minutes
  11. Add 2 chopped green chillies and some coriander leaves
  12. Turn the flame off...Potato curry is ready
  13. For Ghia bhurji...Peel and Grated bottle guard
  14. Now keep it in a vok on medium flame
  15. It will release it's own water
  16. Let it cook open for 5 minutes
  17. Now add salt and pepper powder
  18. Now add a tadka of 1 teaspoon cumin seeds in 2 tablespoons ghee in this bhurji
  19. Add 2 chopped green chillies
  20. Mix well
  21. Turn the flame off...Bhurji is ready
  22. For poories. ..Take both the flour in a pot
  23. Add little bit salt
  24. Add 4 mashed potatoes Maje a tight dough
  25. Now make small balls
  26. Roll it with tolling pin
  27. Deep fry till golden
  28. For shakarkand i.e sweet potato halwa....Boil sweet potatoes
  29. Peel and mashed sweet potatoes
  30. Put pan on medium heat
  31. Add 4 tablespoons pure ghee
  32. Add mashed sweet potatoes
  33. Roast well till golden
  34. Add sugar...Mix well
  35. Turn the flame off
  36. Garnish with dry fruits...Halwa is ready
  37. For raita ...Beat the curd
  38. Peel and Grated cucumber
  39. Add in curd
  40. Add salt to taste and roasted cumin seeds powder
  41. Mix well ...Raita is ready
