Cardamom and roasted brazilnut icecream(Navratri special)

ABOUT Cardamom and roasted brazilnut icecream(Navratri special) RECIPE

A very natural and all healthy homemade ice cream. The mild cardamom flavour gets an oomph from roasted brazilnuts.

Ingredients Serving: 4

  1. For Brazilnut milk
  2. 1 cup brazilnuts
  3. 2 cups water
  4. For ice-cream
  5. 1/2 cup whipped cream
  6. 1/2 cup condensed milk
  7. 1 1/2 cup brazilnut milk
  8. 1tbsp milk powder
  9. 1/2tsp cardamom powder
  10. 1/4 cup brazilnuts
  11. Mint leaves to garnish

Instructions

  1. To make brazilnut milk :-
  2. Wash and soak the nuts overnight.
  3. Wash and rinse the nuts
  4. Now in a blender add nuts and 1 cup water and blend it for a few seconds.
  5. Add another cup of water and grind to a fine paste.
  6. Put the pulp in a muslin cloth and extract milk from it .
  7. Store in a glass bottle and refrigerate until using it.
  8. For roasted nuts Chop the nuts fine and dry roast them in a pan on a slow flame for 10-12 minutes, stirring occasionally.
  9. In a mixing bowl add chilled nut milk , whipped cream and condensed milk.
  10. Whisk it for a couple of minutes with the help of a balloon whisk.
  11. Now add in cardamom powder and milk powder.
  12. Mix well.
  13. Transfer the mixture into an airtight container and freeze it for a minimum of 3-4 hours.
  14. Remove it from the freezer and empty the contents in a blender and pulse it.
  15. Transfer it back to the container and fold in the roasted nuts
  16. Close the lid tight and freeze again.
  17. Remove from the freezer 20 minutes before serving .
