Green chutney:- Grind green chillies, coriander leaves, mint leaves,mango ginger and salt to a fine paste in a blender. Mix lemon juice and collect separately.
Red chutney :-Saute red chillies,1 sliced onion, tomatoes,garlic,tamarind in 1 tablespoon coconut oil and blend to a smooth paste with adequate salt.
Vegetable mix:- Grate beetroot and carrot to thin juliennes. Slice 1 onion. Mix all together with lemon juice and coconut oil.Do not add salt otherwise it will start leaving water.
Arrange all the ingredients.
Divide the thattuvadais into 2 portions. Apply green chutney on a one side in one portion and red chutney on one side in the other portion
Place a tablespoon full of vegetable mix over the green chutney laden thattuvadai. Cover it with the red chutney laden thattuvadai.
It will be like a sandwich- spicy and tangy. It has to be chewed as a whole. The spices may sometimes bring tears in your eyes.
