ABOUT Satay Peanut Sauce RECIPE

This aromatic and mouth watering sauce is a perfect accompaniment to chicken satay. This Malaysian style Peanut sauce is extremely tongue tingling with all the flavours like spicy, sweet and sour. Peanuts, being the main ingredient, is combined with galangal, garlic, red chillies, tamarind paste and sugar to make this delicious dip.

Ingredients Serving: 3

  1. 1-2 lemongrass, chopped (only the white portions)
  2. 1 onion, chopped
  3. 3- garlic cloves
  4. 1" galangal, sliced
  5. 6-7 dry red chilies
  6. 1 cup roasted peanuts, powdered
  7. salt to taste
  8. 1 tsp. tamarind paste
  9. 1-2 tssp. sugar
  10. 2 tbsp. oil

Instructions

  1. Blend together lemongrass, garlic, galangal and red chilies along with some water into a paste.
  2. Heat oil in a pan and saute the onion till light brown. Add the ground paste and fry on a medium flame till the oil separates.
  3. Add the peanuts, salt, sugar, tamarind paste and a cup water.
  4. Mix everything well and simmer till it thickens slightly and the oil separates.
  5. Serve along with chicken satay.
