Ingredients Serving: 2

  1. Flattened Rice - 1 cup,
  2. Oil - 1 tespoon
  3. Turmeric powder - 1/2 tsp
  4. Water as required
  5. Grated ginger - 1 tsp grated
  6. curry leaves/ coriander leaves - few to temper
  7. Green chilly - 1 no finely chopped
  8. peanuts - 2 tablespoon (or else add as per need )
  9. boiled potato - 1/4 cup
  10. soaked flattened rice -1 cup
  11. Salt - as required
  12. Coconut grated 1/4 cup (optional; but recommended for the taste)
  13. Lime juice 1 teaspoon
  14. urad dal - 1 tablespoon
  15. water as required to sprinkle
  16. Mustard Seeds- 1 teaspoon
  17. 1 large Onion, chopped

Instructions

  1. Take a wide vessel add the flattened rice / poha, then add a pinch of turmeric and sprinkle some water. keep aside for 15 minutes, either cold water or hot water can be used.
  2. But do not pour the water, just sprinkle and evenly spread the water. Meanwhile peel and cut the potato and boil it . Once cooked strain the water, keep aside.
  3. Take a kadai and add the oil , once hot add the mustard seeds, once cracked add the urad dal, saute till it changes its color, then add the grated ginger, onion and green chilly along with peanuts, stir it till its roasted.
  4. If needed curry leaves can be added at this stage, Then add the soaked poha /flattened rice. Adjust salt.
  5. Stir well and close the lid the for 5 to 10 minutes, once cooked add the lime juice and shredded coconut, mix well.
  6. if needed it can be tempered with coriander leaves. Once cooked, off the flame, serve it with a cup of Tea / Green tea.

In this recipe potatoes were peeled , boiled and kept aside but were not used in the poha at all.

I m from Bombay, n as far as i know only onion is added to this poha n not any other veggies
