Start by boiling 8 eggs. If you like your scotch eggs runny, boil the eggs only for 6 minutes. If you'd like a hard-boiled egg, boil for 10 minutes. Remove, shell and keep aside.
Add paprika, mustard and nutmeg into a chopper along with the sausage meat and mince finely.
Take a nice big ball of the sausage meat and make a hole in the center. Add in the egg, and cover with some more meat until the whole egg disappears.
Now heat oil in a large pan. Start by lining three bowls together. In one bowl mix the flour with salt and paprika. In another bowl add the eggs and beat them well and finally in the third bowl add the breadcrumbs.
Take the sausage wrapped egg and dust it well with the flour mix, then dip into the eggs and finally roll it completely in the bread crumb bowl.
Deep fry until the golden brown. Serve hot with mustard, relish and ketchup.
