Simple Gujarati milk dessert.

Ingredients Serving: 4

  1. 1 1/2 Milk (Full cream)
  2. 3/4 to 1 cup sugar
  3. 1/2 teaspoon Cardamom powder
  4. Almonds 1/2 cup
  5. Cashew nuts 1/2 cup

Instructions

  1. Boil the milk using a thick bottom pan. After one boil, simmer and let it reduce in quantity. Keep stirring and wait for the quantity to become half in size.
  2. Add sugar and cardamom and continue to cook on simmer. Make sure you scrape the sides and let it attain a rabdi consistency. Turn off the flame.
  3. Serve warm or chilled with chopped almonds and cashewnuts.
