Capsicum stuffed with potatoes, peanuts and desicated coconut

Ingredients Serving: 4

  1. 6 whole capsicums
  2. 1 green chilli
  3. 3 boiled potatoes
  4. 1/2 cup salted peanuts
  5. 1/4 cup desiccated coconut
  6. Salt to taste
  7. 1/2 tsp mango powder
  8. 1/2 tsp chilli powder
  9. 1/2 tsp fennel powder
  10. 1 small onion chopped
  11. 1 tsp cumin powder
  12. oil to baste

Instructions

  1. Start by slicing the capsicum in half. Remove the seeds and rub green chilli inside the capsicums and keep aside.
  2. In a bowl mix together the boiled potatoes, onions, peanuts, coconuts and all the spices. Adjust for seasoning.
  3. Fill the capsicums with this mixture. Drizzle a bit of oil and bake at 180 degrees Celcius for 25 minutes. Alternately leave it on a hot pan on low heat for 15 minutes.
  4. Take out when charred. Serve warm
