About Basundi Recipe

Basundi is an aromatic and flavourful dessert of Gujarat .The milk is reduced and thickened to prepare this delicacy. It is also similar to rabdi of North India.

Ingredients to make Basundi

  • Milk - 1/2 litre full cream
  • Milk - 1 tbsp
  • sugar- 2 tsp
  • cardamom powder- a pinch
  • almonds- 8-10
  • pistachios- 8-10
  • saffron strands- few
  • To garnish:
  • Silver varq - 1
  • Few almond silvers and chopped pistachio

How to make Basundi

  1. Take saffron strands and dissolve it in 1 tbsp warm milk and keep aside.
  2. Take 1/2 litre milk in a heavy bottom vessel and boil it. After it comes to a boil, reduce it to half while stirring on a low flame.
  3. Once it has reduced and thickened, add cardamom powder and almond silvers and chopped pistachio and mix it well.
  4. Add saffron dissolved in milk and mix.You can now feel all the aromas flowing out as the Basundi is ready.
  5. Pour it in traditional matkis and garnish it with almond silvers and pistachio.
  6. Gently decorate with silver varq and your dessert is ready to be enjoyed hot or cold as per your choice.

My Tip:

You can make a low calories and healthy Basundi by adding low fat milk instead.
