ABOUT Roasted Red Bell Pepper Pasta RECIPE

Roasted red bell peppers sauce gives rich, smoky and creamy flavor to this pasta.

Ingredients Serving: 4

  1. For Roasted Red Bell Pepper Sauce:-
  2. Red bell peppers- 4 med
  3. Onion, chopped- 2 med or 1½ cup
  4. Garlic, chopped - 6 to 8 cloves
  5. Black Pepper, freshly ground - 1 tsp
  6. Mix herbs- 1 tsp
  7. Chilli flakes- 1 tsp
  8. Cayenne pepper or Chili powder- ½ tsp
  9. Heavy Cream - ¼ cup or more to taste
  10. Butter- 4 tbsp
  11. Olive oil- 1 tbsp
  12. Water- approx 1 cup
  13. Salt- to taste
  14. Other ingredients:-
  15. Any Pasta of your choice (I Prefer Fusilli or Penne)- 250 gm
  16. Parsley, finely chopped- 2 tbsp
  17. Parmesan cheese, grated- as required

Instructions

  1. For Roasted Red Bell Pepper Puree:-
  2. Roast peppers directly on a flame.
  3. Keep in a bowl and cover them for min 15 minutes.
  4. Discard the burned peels and chop roughly.
  5. Heat 2 tbsp of butter in a nonstick pan over medium heat.
  6. Add the onions and garlic and saute for 2 to 3 minutes or until starting to soften. Add the chopped red peppers and cook for 2 to 3 minutes.
  7. Switch off the gas and let it cooled a little bit.
  8. Transfer this mixture to a food processor or blender. Make a smooth puree.
  9. For making Pasta:-
  10. Cook pasta in salted water according to package directions and drain. Do not overcook. It should be al dente.
  11. Heat olive oil and other 2 tbsp of butter in a large nonstick pan or wok.
  12. Pour the pepper puree into the pan. Add water, mix herbs, chilli flakes, chilli powder, salt, and pepper. Give a nice stir.
  13. Bring to boil this mixture and turn the heat low.
  14. Add the cream and stir to combine. Taste and adjust seasonings if you need to. Roasted Red Bell Pepper Sauce is ready.
  15. Add boiled pasta and stir well it together to coat the pasta for 2 minutes.
  16. Serve hot with parsley and a sprinkling of Parmesan cheese on top.
