Ingredients Serving: 4

  1. Prawns cleaned , deveined 1 kg.
  2. Red chillies 4
  3. Garlic cloves 12 chopped
  4. Ginger garlic paste 1 teaspoon
  5. Bay leaves 3
  6. Star anise 3
  7. Stone flower 2 crushed
  8. Mace crushed 2
  9. Cinnamon sticks 2 long
  10. Cloves 5
  11. Cardamom 4
  12. Dried hibiscus crushed 2
  13. Oil 5 tablespoons
  14. Ghee 2 tablespoons
  15. Onions big sized sliced 2
  16. Tomatoes small sized ripe 2 roughly chopped
  17. Mint leaves 1/2 bunch
  18. Curry leaves 12
  19. Salt 3 teaspoons
  20. Turmeric powder 1/2 teaspoon
  21. Coriander powder 1/2 teaspoon
  22. Biryani Masala 1.5 teaspoon
  23. Basmati rice 4 cups soaked for 20 minutes
  24. Coconut milk extracted from full coconut 4 cups

Instructions

  1. Take the biryani whole spices . Bay leaves, mace, cinnamon, cloves, stone flower,star anise,elaichi
  2. Heat 5 tablespoons oil . 2 tablespoons ghee .Fry whole spices,4 red chillies .Aroma is released .
  3. Add 2 sliced onions . Sauté till brown.
  4. Add finely chopped 12 garlic cloves . Sauté all together.
  5. Add 1 teaspoon ginger garlic paste . Saute for few seconds.
  6. Add 1/2 bunch mint leaves . Sauté for few minutes.
  7. Add 2 small ripe tomatoes roughly chopped . Sauté till mushy and soft . Add salt .
  8. Turmeric powder 1/2 teaspoon,coriander powder 1/2 teaspoon. Biryani masala 1 tablespoon.Mix all .
  9. Add 1 kg cleaned deveined prawns . Cover the pot and cook for 5 minutes . Don’t overcook prawns .
  10. Add curry leaves . Sauté . Add the soaked 4 cups basmati rice . Fry for two minutes with masala .
  11. Extract thick coconut milk from 1 full coconut . Add 4 cups coconut milk to the rice. Set to cook .
  12. Adjust coconut milk / water as per the rice quality . Cover the pot and cook for 10 to 15 minutes .
  13. Coconut milk Prawn biryani is ready . Serve with raita .
