A spicy yummilicious Biryani . My Mom’s recipe .
Take the biryani whole spices . Bay leaves, mace, cinnamon, cloves, stone flower,star anise,elaichi
Heat 5 tablespoons oil . 2 tablespoons ghee .Fry whole spices,4 red chillies .Aroma is released .
Add 2 sliced onions . Sauté till brown.
Add finely chopped 12 garlic cloves . Sauté all together.
Add 1 teaspoon ginger garlic paste . Saute for few seconds.
Add 1/2 bunch mint leaves . Sauté for few minutes.
Add 2 small ripe tomatoes roughly chopped . Sauté till mushy and soft . Add salt .
Turmeric powder 1/2 teaspoon,coriander powder 1/2 teaspoon. Biryani masala 1 tablespoon.Mix all .
Add 1 kg cleaned deveined prawns . Cover the pot and cook for 5 minutes . Don’t overcook prawns .
Add curry leaves . Sauté . Add the soaked 4 cups basmati rice . Fry for two minutes with masala .
Extract thick coconut milk from 1 full coconut . Add 4 cups coconut milk to the rice. Set to cook .
Adjust coconut milk / water as per the rice quality . Cover the pot and cook for 10 to 15 minutes .
Coconut milk Prawn biryani is ready . Serve with raita .
