ABOUT Ragi flour ( nachni ) khichu RECIPE

Khichu is a very healthy afternoon snack of Gujrat. It is very easy to make and easily digestible as well, it's a good option for a low calorie snack. Nachni is a very nutritious ingredient as it is rich in iron, protien, fibre and calcium as well.

Ingredients Serving: 4

  1. 1/2 cup of fresh curd mixed with 1 cup of water
  2. 1/2 cup ragi /nachni flour (red millet)
  3. Salt to taste
  4. 1 tsp cumin seeds
  5. 1 tsp red chilli powder
  6. 1 green chilli, finely chopped
  7. A pinch of asafoeida
  8. 1 pinch baking soda
  9. Some finely chopped coriander leaves
  10. 2 tsp oil for serving

Instructions

  1. Take a non-stick pan, put in curd, water and mix well, then add the salt, cumin seeds, chilli powder, baking soda and green chillies. Mix well . Let it boil .
  2. Now add the ragi flour and mix well. Stir continuously so that no lumps remain.
  3. Cover and cook on a slow flame for 5 - 7 minutes or until the mixture leaves the sides of the pan.
  4. Add coriander leaves and drizzle 1 tsp oil on the mixture.
  5. Serve it immediately.
