ABOUT Chinese Noodle Soup RECIPE

A one-pot quick vegetarian noodle soup with crunchy mix of vegetables and thin vermicelli noodles in a spicy soy broth.

Ingredients Serving: 2

  1. 1 small packet vermicelli noodles
  2. 3 green onions, white part chopped
  3. 2 large cloves of garlic, finely chopped
  4. 2 green chillies/jalapenos, sliced
  5. 2 tablespoons of coriander leaves, chopped
  6. 1 stalk celery, chopped
  7. 1 cube of Maggi vegetable seasoning, crushed (optional)
  8. 1 medium carrot, finely chopped
  9. 1/2 capsicum or bell pepper, finely chopped (red or green)
  10. 1/2 zucchini squash, quartered
  11. salt to taste
  12. 1 tablespoon dark soy sauce
  13. 1 tsp vinegar
  14. Celery leaves for garnishing
  15. 2 tsp sesame oil or any other cooking oil


  1. Prepare noodles according to package instructions in plenty of water and do not drain. Keep aside.
  2. Heat oil in a deep saucepan and once hot, add the garlic, green onions and green chilies. Saute for a few minutes until seared, on high.
  3. Stir in chopped celery and coriander leaves and fry again for a minute. Tip in the finely chopped vegetables along with the crushed maggi cube and stir fry on high for another minute; the vegetable should be crisp tender.
  4. Pour in the cooked vermicelli noodles along with the water and bring to a boil. Add more water if necessary and season with salt; remember, soy sauce too has some salt.
  5. Once it comes to a boil, stir in soy sauce and vinegar, give it a good mix and serve hot and quick Chinese style one-pot noodle vegetable soup with a garnish of celery leaves or chopped green onions.
