ABOUT Oats Kothimbir Vadi RECIPE

A super healthy twist to the traditional Maharashtrian snack Kothimbir chi vadi.

Ingredients Serving: 3

  1. 2 cups finely chopped coriander leaves
  2. 4 tbsp powdered oats
  3. 1 tbsp besan
  4. 1 tbsp rice flour ( optional during navratri )
  5. 2 tsp yogurt
  6. 1 tsp lemon juice
  7. 1 tsp chilli powder ( adjust as per taste )
  8. 1 tsp canola oil
  9. 1/5 tsp turmeric
  10. 1 tsp sugar
  11. 1 tsp grated ginger
  12. A pinch of baking powder
  13. Salt to taste
  14. For seasoning:
  15. 1/2 tsp mustard seeds
  16. 1/2 tsp cumin seeds
  17. 1 tsp sesame seeds
  18. 1 sprig curry leaves
  19. A pinch of asafoetida
  20. 1 tsp canola oil

Instructions

  1. Take all the ingredients into a mixing bowl. Knead into a firm and smooth dough. Keep it aside for 15 mins.
  2. Roll the dough into cylindrical shapes.
  3. Boil water in a steamer. Once it gets to steaming, steam the dough at medium high for 15 mins. Remove and keep aside till it cools down. Cut into small bite sized circles.
  4. Heat the remaining oil in a wok. Add the mustard and cumin seeds, followed by the asafoetida, curry leaves and sesame seeds.
  5. Add the vadis and toss it gently to ensure that each and every bite is coated with the aromatic seasoning.
