About Chocolate Eclairs.. Recipe

An amazing melt in mouth French dessert that will sweep you off your feet. The mushy crusts and the soggy filled up centres just take your breath away. This is one delish dessert that cannot be missed on an important occasion or a family get together. This particular version of it by me contains chocolate flavoured whipped cream as a filling and ofcourse melted chocolate on top. However custard filling also is one of the favourites of many a people. A pure chocolaty indulgence is what i call this beauty.

Chocolate Eclairs..

Ingredients to make Chocolate Eclairs..

  • FOR THE PASTRY ; all purpose flour 1 cup
  • salt 1/8th tsp
  • butter cubed 8 tbsp
  • Milk 1/2 cup
  • eggs 4 (at room temperature)
  • FOR THE FILLING ; caster sugar 3 tbsp
  • Cocoa powder 2 tbsp
  • Vanilla essence 1 tsp
  • Whipping cream 1 cup
  • FOR THE CHOCOLATE ICING ; Semi sweet chocolate chips 1 cup
  • Heavy whipping cream 3/4th cup

How to make Chocolate Eclairs..

  1. Add the first three ingredients mentioned under pastry making to a saucepan.
  2. Heat it and add in the flour too.
  3. Mix it well until it is smooth and dry for about 2 minutes and then take it off the heat.
  4. Now break in the eggs into it one by one and mix well.
  5. Fill this pastry dough into a piping bag and pipe about 4 inch lines of dough onto the parchment paper lined baking tray.
  6. Bake on 180° for about 15-18 minutes.
  7. Allow them to cool.
  8. For the filling, beat cream using an electric beater until soft peaks are formed.
  9. Add cocoa powder and caster sugar to it.
  10. Mix well and keep it refrigerated until use.
  11. Meanwhile heat heavy cream on a low heat for a minute and add it to a bowl of chocolate chips.
  12. Mix well and keep it aside.
  13. Slit the eclairs from the centre for the filling or use two eclairs sandwiched with whipped cream as i did. Either ways it is absolutely divine.
  14. Now using a piping bag filled with the chilled chocolate flavoured whipping cream, pipe it generously onto the centre of each cooled down eclairs.
  15. Follow this for all the eclairs and dip the top part in the melted chocolate immediately.
  16. Serve them right away.

My Tip:

Sugar can be added according to one's own preference.
