About Khao pad sapparot Recipe

Thai pineapple fried rice, with prawns. A perfect one pot meal for all times.

Khao pad sapparot

Ingredients to make Khao pad sapparot

  • 3 tbsp Vegetable oil
  • 1 onion, thinly sliced
  • 2 garlic cloves minced
  • 100 gms cleaned prawns
  • 1/4 cup carrots chopped
  • 1 tsp curry powder
  • 1 tbsp fish sauce
  • 1 tbsp soy sauce
  • 2 cups cooked sticky rice
  • 1 cup pineapple pieces
  • Salt and pepper
  • 1 egg

How to make Khao pad sapparot

  1. In a large pan, drizzle oil over high heat.
  2. Once thoroughly heated, add onions and garlic. Cook until starting to soften and fragrant, about 1 minute
  3. Add beaten egg and cook for a min
  4. Stir in the shrimp and carrots. Cook, stirring often, until shrimp begins to turn light pink, about 1 minute
  5. Stir in the curry powder, fish sauce, and soy sauce.
  6. Add the rice and pineapple, tossing to combine. Cook until heated through. 
  7. Season with salt and pepper
  8. Add spring onions and serve
  9. Garnish with cashews and sliced cucumber

My Tip:

You can also add chicken instead of prawns
