Cream of Cucumber Soup

Ingredients to make Cream of Cucumber Soup

  • 1 large cucumber
  • 1small potato
  • 1small onion
  • 1tsp all purpose flour
  • 2 chicken soup cubes
  • 2tsp cream
  • Salt-pepper as per taste
  • 1tsp corn flour

How to make Cream of Cucumber Soup

  1. Skin the cucumber and potato with a potato peeler.
  2. Slice cucumber, potato and onion.
  3. Melt butter in a pan over a gentle flame. Add all-purpose flour and mix well.
  4. Add milk, cornflour, chicken soup cubes, salt and pepper. Prepare white sauce and keep aside.
  5. Make fine paste of cooked cucumber, potato and onion in the mixer.
  6. Sieve the pasta from the strainer.
  7. Add few drops of edible green colour.
  8. Add cucumber paste to the white sauce.
  9. Mix well and boil.
  10. Add 2 tsp of cream into the soup.
  11. Serve hot.
  12. Healthy and yummy cream of cucumber soup is ready.
