Bombay Duck and Brinjal Fry

Ingredients to make Bombay Duck and Brinjal Fry

  • Salmon fillets 2
  • Freshly ground black pepper 1-2 tbsp
  • garlic paste 1 tbsp
  • salt 1/2 a tsp
  • potatoes 4
  • Milk 1/2 a cup
  • butter 1 tbsp
  • lemon juice 1 tbsp
  • Broccoli 1 cup
  • olive oil 2 tbsp

How to make Bombay Duck and Brinjal Fry

  1. Season fish fillets with salt, garlic and black pepper.
  2. Heat olive oil in a double grill pan.
  3. Cover it and let it cook until done.
  4. Flip it over in between and keep checking. It will be done in nearly 10 minutes.
  5. Also add broccoli florets to the pan. They will be done along with the fillets.
  6. For the mashed potatoes boil them with little salt.
  7. Add butter to a pan.
  8. Now add black pepper and milk.
  9. Next add boiled and peeled potatoes to it. Mash them with a masher until well combined.
  10. Add more milk if needed.
  11. Creamy mashed potatoes are ready in no time.
  12. For serving, place the pan seared salmon fillet followed by a generous scoop of mashed potatoes with broccoli on the sides. Do not forget to serve this with raw veggie salad for that perfect meal.
