Khandavi

Ingredients to make Khandavi

  • gram flour 1/2 bowl
  • buttermilk 1 1/2 bowl
  • salt to taste
  • turmeric powder 1/4 tsp
  • ginger paste 2 tsp
  • Grated coconut handful
  • mustard seeds 1 tsp
  • curry leaves few
  • Cooking oil 2 tsp

How to make Khandavi

  1. 1 1/2 BOWL BUTTERMILK
  2. ADD SALT, GINGER PASTE AND STIR WELL
  3. ADD SIEVED GRAM FLOUR, KEEP ON STIRRING
  4. MIX WELL TILL ALL LUMPS ARE DISSOLVED, TILL SMOOTH DOUGH
  5. ADD 1/4 TSP TURMERIC POWDER, MIX WELL AND SET ASIDE FOR 10 MINUTES
  6. SPREAD 1 TSP OF COOKING OIL ON THE BACK OF THE PLATE
  7. HEAT OIL AND LET CRACKLE MUSTARD SEEDS
  8. ADD CURRY LEAVES, TURN OFF THE FLAME
  9. KEEP ON STIRRING THE BATTER IN LOW FLAME
  10. KEEP ON STIRRING WHEN THE KHANDAVI BATTER IS GETTING HEATED UP, TO AVOID LUMPS
  11. KEEP ON STIRRING IN WOODEN SPATULA TO AVOID THE STICK AT THE BOTTOM OF THE PAN
  12. CHECK THE THICKNESS, IT TAKES MINIMUM 20 MINUTES
  13. POUR ON OIL GREASED PLATE
  14. SPREAD IT WITH A SPATULA
  15. SPREAD THINLY AND EVENLY, ALLOW IT TO COOL
  16. CUT THE EDGES
  17. CUT INTO EQUAL SIZED STRIPES AND, ROLL IT IF YOU WANT, OTHERWISE CUT INTO SMALL PIECES
  18. GARNISH WITH GRATED COCONUT
  19. SPRINKLE SEASONING AND SERVE
