Ingredients Serving: 6

  1. Ingredients for paav:
  2. Maida 4 cups
  3. Sugar 1 tsp
  4. Salt 1 tsp
  5. Yeast 2 tbsp (I used instant)
  6. Warm water 1 glass
  7. Milk powder 1 tbsp
  8. Olive oil to mix and grease
  9. Milk to brush on balls
  10. Ingredients for bhaji:
  11. Vegetables all cut in cubes and boiled: carrot 1
  12. cauliflower 1 cup
  13. beans 1 cup
  14. potato 2 big
  15. Salt to taste
  16. Capsicum half for sauteeing
  17. Cheese 3 to 4 tbsp
  18. Butter 40 gms or 4 tbsp
  19. Red chilli and garlic paste
  20. Tomatoes 3 big ones (finely chopped)
  21. Onions 2 (finely chopped)
  22. coriander powder 1 tsp
  23. Cumin powder 1 tsp
  24. Garam masala powder 1 tsp
  25. Coriander leaves (chopped)
  26. Fenugreek/methi leaves for garnish

Instructions

  1. Knead a dough with the ingredients mentioned under 'paav' (prepare the yeast beforehand by keeping it with some warm water along with some sugar).
  2. Keep the dough and bowl greased and keep it aside for rising for an hour or more.
  3. After an hour punch the dough and make balls and keep aside covered for ten minutes to rise again.
  4. Then brush with milk and bake for 20 minutes at 170 celcius.
  5. For bhaji: First grind the red chilli and garlic into paste.
  6. Take some oil in a kadhai and add the red chilli garlic paste.
  7. Add the tomatoes and saute.
  8. Add all powders and keep sauteing till it changes colour.
  9. Add boiled vegetables with water and mash well like paste and keep cooking till water is reduced.
  10. Add cheese and butter.
  11. Garnish with coriander leaves and dry methi leaves.
  12. Serve the bhaji with some buttered pav.
