Ingredients Serving: 5

  1. Tinda- 1/2 Kg
  2. Onion-2 sliced long
  3. Tomato- 2 chopped roughly and ground to paste
  4. Garlic- 7-8 nos crushed
  5. Coriander leaves for garnishing
  6. Cumin seeds- 1 tsp
  7. Cumin Powder- 1 tbsp
  8. Coriander Powder- 1 tbsp
  9. Turmeric Powder- 1tsp
  10. Chilly Powder-1/2 tbsp
  11. Kashmiri Chilly powder- 2 tsp
  12. Garam Masala- 1 tsp
  13. Hing- a pinch
  14. Oil as required
  15. Salt to taste

Instructions

  1. Heat oil in pan, add cumin seeds and allow it to splutter
  2. Add onion and crushed garlic fry until onion turns pink in color
  3. Add Tinda and salt and mix well, cover with lid and cook for 6-7 mins in medium flame
  4. Remove lid and add tumeric powder, both chilly powder, coriander powder, cumin powder and garam masala. mix well until all masala incorporated well with veggies.Cover with lid and cook for another 5 mins
  5. Now add tomato paste and mix well and then cook for 5 mins in high flame and later in medium flame until veggies becomes dry
  6. Add coriander leaves and remove from fire.
  7. Serve hot with phulka or paratha
