Tinday also known as apple gourd is a vegetable that is cooked in almost every Indian household specially during Summer. This is a very simple recipe which can be cooked at lunch or dinner with Rotis or Parthas
Tasty as well as healthy.
Heat oil in pan, add cumin seeds and allow it to splutter
Add onion and crushed garlic fry until onion turns pink in color
Add Tinda and salt and mix well, cover with lid and cook for 6-7 mins in medium flame
Remove lid and add tumeric powder, both chilly powder, coriander powder, cumin powder and garam masala. mix well until all masala incorporated well with veggies.Cover with lid and cook for another 5 mins
Now add tomato paste and mix well and then cook for 5 mins in high flame and later in medium flame until veggies becomes dry
Add coriander leaves and remove from fire.
Serve hot with phulka or paratha
