ABOUT Mix Veg Handvo - Pressure Cooker Baked RECIPE

Handvo is a traditional gujarati dish, different types of pulses, rice and vegetables are used to make this healthy veg cake.

Ingredients Serving: 6

  1. Rice - 1/2cup
  2. Tuvar dal - 2tbsp
  3. Chana dal - 1 1/2 tbsp
  4. Urad dal - 1tbsp
  5. Mung dal - 1 tbsp
  6. Curd - 1/2 cup
  7. Bottle gourd - 1 cup (grated)
  8. Carrot - 2/4 cup (grated)
  9. Cabbage - 1/4 cup (grated)
  10. Capsicum - 1/4 cup finely (chopped)
  11. Ginger paste -1 tbsp
  12. Green chili paste - 1/2 tbsp or adjust to your taste
  13. Salt - as required
  14. Baking soda - 1 tsp
  15. Oil - 1 tbsp
  16. turmeric powder - 1 tsp
  17. Chili powder - 1-2 tsp
  18. For tempering:
  19. Mustard seeds - 1 1/2 tsp
  20. Sesame seeds - 2 tsp
  21. Curry leaves - 1 tbsp
  22. Dry red chili - 1- 2
  23. Asfoetida/hing - 1/2-1 tsp

Instructions

  1. Soak rice and dal for 6-7 hours.
  2. Then drain water from rice and dal and grind into a smooth paste.
  3. Mix salt, curd and 1 tbsp oil. Cover it and keep it for fermentation for 8-10 hours or overnight.
  4. Then add grated bottle gourd, carrot, cabbage, capsicum, chili powder, chili powder. Mix it well, then add baking soda and give a good stir.
  5. Then grease a pan with 1-2 tsp oil and dust it with maida.
  6. Pour the handvo batter to the greased pan and tap it a little.
  7. Heat a pan with 1/2 tbsp oil, add mustard seeds. Once they start crackling, add curry leaves, dry red chili, hing and sesame seeds.
  8. Spread the tarka over the handvo batter.
  9. Heat a pressure cooker. Put a aluminium rack inside the cooker, keep the batter pan inside the cooker on the rack. Cover it with lid without locking it.
  10. Reduce the the flame 1 1/2 hours.
  11. When you see a brown crust over the handvo or a knife or spoon put inside the handvo comes out clean, it means it is done.
  12. Give it a 20-30 minute standing time and then take out from the pan.
  13. Mix veg healthy and tasty handvo is ready to serve. Serve it with green chutney.
