About Baked New York Cheesecake - low Cal Recipe

What do you do when you crave cheesecake, but can't afford the calories? Or dont have cream cheese in the fridge. You use dahi or yogurt from your fridge.

Baked New York Cheesecake - low Cal

Ingredients to make Baked New York Cheesecake - low Cal

  • 1 3/4 cup or 400 gms hung curd
  • 200 gms jaggery powder or golden sugar
  • 3 eggs
  • 2 Tbsp cornflour
  • 1/2 tsp orange essence
  • 1 ½ pack nutrichoice digestive biscuits
  • 2 tbsp soft butter
  • ½ tsp lemon zest
  • ½ tsp salt
  • Strawberries, mulberries or any berries to decorate

How to make Baked New York Cheesecake - low Cal

  1. Grind the digestive biscuits with the lemon zest.
  2. Mix the biscuit crumbs with soft butter and press into a paper lined springform pan.
  3. Bake at 180C for 10 minutes. Remove from oven and cool.
  4. Turn on oven to 150C . And set up a deep baking .
  5. Lightly whisk the hung curd. Make sure your hung curd has no liquid and is totally dry. Otherwise the crust will get soggy.
  6. Measure in the sugar and eggs into the hung curd. Whisk together.
  7. Add in the cornflour and orange essence.. whisk well.
  8. Pour over set cookie crumb base. Place the springform on a double sheet of aluminum foil and wrap it tight so that no water can enter springform pan.
  9. Place on the deep dish and pour hot water till at least an inch of the Cheesecake.
  10. Bake for at least 75 minutes or till just the centre jiggles when you shake the time a bit.
  11. Allow it to come to room temperature. Cover and chill overnight.
  12. Run a knife around the Cheese cake. Open the spring and use a large spatula to slde onto a cake stand or service platter.
  13. Decorate with berries and slice

My Tip:

Make sure the hung curd has no residual liquid. Else the base will get soggy. Use jaggery if theres no jaggery powder
