ABOUT Kale Quinoa Salad RECIPE

A delicious blend of avocado , yogurt and peppers , giving this kale quinoa salad a great kick in the taste, a healthy bowl for a more fitful healthy life . .

Ingredients Serving: 4

  1. 1 bunch kale .
  2. 1 avocado
  3. 1 carrot
  4. some cilantro leaves
  5. 1-2 garlic cloves
  6. 1 cup quinoa
  7. salt as needed
  8. 1 tbsp lime juice
  9. 1-2 tbsp fresh cream
  10. 1-2 jalepenos
  11. some black pepper
  12. 1/2 tsp cumin powder
  13. some sunflower seeds
  14. 1 tsp pine nuts
  15. 1 small cup greek yogurt
  16. 4-5 tofu cubed
  17. 1 tbsp olive oil
  18. for the avocado creamy yogurt dressing ..:for the avocado dressing 1-2 garlic cloves
  19. 1-2 garlic cloves
  20. Salt
  21. Lime juice 1 tbsp
  22. 1 avocado
  23. ¼ cup greek yogurt
  24. 1-2 jalapenos
  25. 1 tbsp Olive oil
  26. small pinch of pepper
  27. 10 sprigs cilantro leaves
  28. 1-2 tbsp fresh cream

Instructions

  1. Combine all above in a blender , add more lime juice if it is too thick . Pour this over you salad . yummy !
  2. Wash and cook quinoa with 1 cup water in a pan , add a pinch of salt., let it cook till most of the water is absorbed
  3. Wash the kale leaves well, and remove thick veins , chop finely . Add chopped kale to a bowl, sprinkle some salt , oil olive, toss well ..
  4. Roast tofu in a pan , and allow to get a light brownish colour , use olive oil , Grate carrots and keep aside, chop cucumbers to fine pieces,
  5. Now mix all in a bowl with the chopped kale,sunflower seeds, some pine nuts , add pepper, cilantro leaves, add the roasted tofu, and finally drizzle the avocado dressing as needed. Delicious kale salad is ready to be enjoyed
