ABOUT Ditalini Vegetable soup RECIPE

Ditalini is a type of pasta that is shaped like small tubes. Italian language it called Ditalini which means small thimbles. During the industrial age in Apulia,Italy, ditalini pasta born. It is very common in sicily and used for several pasta dishes. Though its small size is very ideal for using in soup dishes. Chicken and other meat with vegetables are often used to make ditalini soup. Mine is vegetarian one,Ditalini vegetable soup. Lots of fresh vegetables,cheese and pasta make a ideal light wholesome healthy dish.

Ingredients Serving: 6

  1. 1 1/2 cup Ditalini pasta
  2. 4 tbsp Olive oil
  3. 1 cup chopped onion
  4. 1 tsp garlic minced
  5. 1 cup chopped carrot
  6. 1/2 cup fresh green peas
  7. 1/2 cup small brocolli florets
  8. 1 cup chopped tomatoes
  9. 1 tbsp dried basil
  10. 1 tsp black pepper powder
  11. 1 cup Parmesan Cheese
  12. Salt for seasoning

Instructions

  1. Boil 4 cups of water and cook pasta as per box instructions. After done drain water and keep it in cold water.
  2. Heat olive oil in a large pot. Add minced garlic,after it turns light brown add onion,carrot and other vegetables except tomatoes. Saute until tender.
  3. Add 4 cups of water and add tomatoes,salt,pepper and dried basil stirring occasionally. After it start boiling add ditalini pasta and cheese.
  4. Boil until cheese melt and pasta and Vegetables incorporate and give a medium thick texture. Serve warm with extra cheese on top.
