Try this Shahi Shikanji which has thick milk with malai and dry fruits in it. It is so different from the Nimbu Shikanji. Well, that’s Shikanji for you, M.P. style. Shahi shikanji is a milk based drink. It is one of the famous drinks of Madhya Pradesh. Madhya Pradesh is situated in the central part of India so it's cuisine has a special place among all the cuisines of India. There are so many special drinks for summer which you can find only in Madhya Pradesh, and shahi shikanji is one of them. Shahi shikanji is totally different from the nimbu shikanji. 'Madhuram Sweets' is one among the 'chppan dukan' of Indore, Madhya Pradesh, this shop offers a variety of delicious sweets and snacks. Among them, the most sought after food item of the shop is the shahi shikanji. This is a must taste drink on a hot summer day. You can easily and quickly prepare this shikanji at your home. You need only a few ingredients like milk, curd, sugar, saffron, cardamom powder and dry fruits like cashew nuts, raisins and almond flex. Firstly, you have to boil the milk in a thick bottomed board pan till the volume reduced to half. Then add sugar and set it down from the flame, now add saffron and cardamom powder and chill it for about 8 hours. And then add all the dry ingredients and serve it. MP style shahi shikanji is a great thirst quencher and perfect for the hot whether.

Ingredients Serving: 2

  1. 1 glass thickened milk
  2. 1/4 glass thick curd
  3. A pinch of saffron
  4. 1/4 cup sugar
  5. A pinch of cardamom powder
  6. 1 tbsp chopped pistachios
  7. Few ice cubes

Instructions

  1. In heavy bottomed pan heat milk and boil along with sugar and a pinch of saffron in it. Reduce the milk to 1 glass, turn off the flame and chill the milk in refrigerator over night.
  2. In a blender, add thick milk, curd and crushed ice and blend it.
  3. Pour the mixture in tall glasses and garnish with crushed pistachios.
