Ingredients Serving: 4

  1. 2 tablespoons parmesan cheese grated
  2. 1/2 teaspoon ground Black Pepper
  3. 6 eggs, hard boiled and sliced from top
  4. 2 tablespoon mayo
  5. 1/2 tablespoon dijon mustard
  6. 1/2 teaspoon white vineger
  7. 1/2 teaspoon Worcestershire sauce
  8. 1/2 teaspoon smoked paprika(red chilly powder)
  9. Salt and pepper to taste
  10. Green coriander leaves minced for garnish

Instructions

  1. Preheat oven to 200C..Line a large baking sheet with a silicone baking mat.set aside.
  2. In a small bowl,toss together grated parmesan cheese,salt and pepper.Place 1 tablespoon of cheese on baking sheet and pat down into flat layer.Repeat with remaining cheese,spacing each 1/2 inch apart.
  3. Bake for 6 minutes until golden.remove from oven and let it cool on baking sheet for 10minutes.They will crisp up once cool.
  4. In a small bowl,mash egg yolks,stir mayo,mustord dijon,white vineger,smoked paprika,worcetershire sauce,salt and pepper stir it nicely to form smooth creamy batter.
  5. Pipe or scoop the filling into the egg white.sprinkle with paprika and coriander leaves.Right before serving,top the eggs with parmesan crisp. Enjoy!
