ABOUT Besan ki Phulki RECIPE

This is a typical refreshing and flavourful vegetarian dish from Uttar Pradesh. It makes for a great evening snack, topped with crisp aloo bhujiya or served with matar ki chaat. Also doubles up as a welcome side dish to a main meal.

Ingredients Serving: 4

  1. Phulki:
  2. 1 1/4 cup {125g} chickpea powder/ besan
  3. 2-3 cloves garlic, minced
  4. 1/2 tsp Salt
  5. 1/2 tsp freshly ground black pepper
  6. 140-150ml {1/2 to 2/3 cup} water
  7. Pinch Of Baking Soda
  8. Spiced Yogurt
  9. 600g yogurt, whisked well until smooth
  10. 1tsp black rock salt
  11. 3 cloves minced garlic
  12. 1 finely chopped green/red chili
  13. Oil for Deep frying

Instructions

  1. Place all dry ingredients for phulki in a large bowl and stir to mix. Gradually add water and whisk to a smooth batter. Add enough water to get a pancake like consistency. Whisk briskly to make the batter airy and light.
  2. Whisk yogurt with black rock salt, garlic and green chilli until smooth. Taste and adjust seasoning. {The yogurt shouldn't be very thick}
  3. Place oil in a deep wok and heat. Once ready, test with a drop of batter. It should sizzle and rise to the top immediately.
  4. Drop 1/2 teaspoonfuls of batter gently into the oil without overcrowding, and fry over medium heat until light golden brown all around. This shouldn't take more than a few minutes.
  5. Drain and remove the first batch to your serving dish. Top with a little yogurt. Drop more batter into the oil.
  6. While these are frying, pour the spiced yogurt over the first batch. Repeat until all the batter and yogurt has been used up. Garnish with fresh coriander, freshly crushed black pepper and green/red chilies.
  7. Chill for about an hour, then serve as a snack or side.
