ABOUT Marwardi Aloo Pyaj ki Subji RECIPE

We all make all kinds of potato and onion curries, they go very well with puris, rotis or rice. This particular one is for roti or soft puris because it is dry but, the flavor is mind blowing. It is the effort we put in, it shows up. So without any delay, lets cook.

Ingredients Serving: 4

  1. 2 potatoes chopped quarterly
  2. 2 onions chopped quarterly
  3. 1 tbsp besan/chickpea flour
  4. 1 tsp Jeera/cumin
  5. 2 tbsp oil
  6. 1 tsp mustard seeds
  7. 1/4 tsp hing
  8. salt to taste
  9. 1 long whole red chili
  10. 1 bay leaf
  11. 1 tsp turmeric powder
  12. 2 tsp red chili powder
  13. 2 tsp cumin coriander powder
  14. lime juice to taste
  15. lots of fresh coriander leaves chopped for garnish
  16. To make powder: 1 tbsp fennel seeds/Saunf, 1 tbsp Coriander seeds/Whole dhaniya seeds

Instructions

  1. Crush the fennel and coriander seeds in a mortar. You do not need a fine powder, so do not use a grinder,little bits will give you a nice taste in every bite.
  2. Heat a non stick pan. Add oil in it. Then add mustard seeds, when they pop, add cumin seeds, when they change the colour, add hing, bay leaf and whole red chili.
  3. Then add fennel and coriander powder and mix it.
  4. Add onion, potatoes and turmeric powder and salt and cover it and let it cook on medium flame. When the potatoes are cooked, add red chili powder, cumin-coriander powder and besan, mix it nicely.
  5. Cover again and cook for 5 more minutes. Serve hot with rotis.
