ABOUT Bhapa Potato (Bengali Cuisine) RECIPE

Bhapa is the Bengali words used for steamed. A very simple recipe Bhapa potato involves very little cooking yet is a food connoisseurs delight. In this dish mustard seeds, green chillies and coconut are ground together into a paste and the potatoes are coated with this paste and steamed in Banana leaves.

Ingredients Serving: 4

  1. 16piece potato (snall size)
  2. 2tsp mustard paste
  3. 1/2 tsp Panchforon
  4. 2 dry red chillies
  5. 2tbsp mustard paste
  6. 1 tsp hung curd
  7. 3/4 tsp desiccated coconut paste
  8. 1/2tsp green chilli paste
  9. 1pinch of turmeric powder
  10. salt as per taste
  11. 1tsp Lemon juice
  12. 2 banana leaves

Instructions

  1. Peel the potatoes and par boil them in salted water, drain and keep aside.
  2. Heat oil in a non-stick pan, add the pancforon, break the red chillies in half and stir the spices around till they splutter.
  3. Pour this over the potatoes and put aside.
  4. In a mixing bowl prepare a marination paste with the mustard paste, curd, coconut paste, green chilli paste and turmeric powder, whip it well.
  5. Gently mix the potatoes into this marinate.
  6. Add the salt and lemon juice, mix again. Cook it for about 2minutes.
  7. Remove potatoes from the pan.
  8. Put the potatoes on a steel plate, cover with the banana leaves and steam them for 6-8 minutes. Serve hot.
