ABOUT Tehri RECIPE

One pot meal from Uttar Pradesh. Aromatic rice with lots of veggies.

Ingredients Serving: 4

  1. Basmati rice/Long grain rice - 2 cups
  2. Vegetables - 3 cups (carrot, beans, cauliflower)
  3. Green peas (fresh or frozen) - 1/4 cup
  4. Boiled Potatoes - 4 medium size
  5. One big onion - thinly sliced
  6. Tomato - 2
  7. Ginger garlic paste - 2 tbsp
  8. Mustard oil 4 tbsp
  9. Green chillies 2-3
  10. Bay leaves - 2
  11. Cinnamon stick – 2″
  12. Brown Cardamom -1
  13. Cardamom - 3
  14. Black cumin seeds 1 tsp
  15. Cloves - 2
  16. Black pepper corns 5-6
  17. Turmeric powder 1 tsp
  18. Red Chilli powder 1 tsp
  19. coriander powder 1 tbsp
  20. Cumin powder 1/2 tbsp
  21. water 4 cups
  22. Salt to taste

Instructions

  1. Wash and soak rice. In a heavy bottomed pan, heat mustard oil and add in the cinnamon sticks, bay leaves, brown cardamom, green cardamom, peppercorn, cloves. Once u get nice aroma add onions & cook till they become pink in color.
  2. Add ginger garlic paste & green chilli, cook till raw aroma goes off. Add all dry powder &tomatoes & little bit water (to prevent the masala from burning) for 5-6 minutes.
  3. Add boiled potatoes & all vegetables, mix properly in masala. Add salt as per taste.
  4. Cover and let it simmer for 15 minutes till the vegetables are about 3/4th cooked.
  5. Add basmati rice and stir till the rice is evenly coated with the masala.
  6. Add water &cover and let it simmer over a slow flame till the rice is cooked
