ABOUT Pineapple gojju RECIPE

Sweet and tangy gravy traditionally prepared in Karnataka which is served with rice.

Ingredients Serving: 4

  1. 1 pineapple , peel and chop into 1 inch cubes, or the canned pineapples
  2. 1 tbsp coriander seeds
  3. 1/4th tsp fenugreek
  4. 2 tbsps urad dal
  5. 8-10 byadgi chillies
  6. 1 inch piece Cinnamon
  7. 1/2 cup dessicated coconut
  8. 3 to 4 tbsps jaggery
  9. 2 tbsps tamarind paste
  10. 1/2 tsp mustard seeds
  11. 1 tbsp oil
  12. Salt to taste

Instructions

  1. Heat the oil in a pan, add mustard seeds and let it splutter, then add the chopped pineapple and enough water to cover the pineapple. Do not add more water. Cover and cook at low to medium heat and let it boil till the fruit turns soft.
  2. Meanwhile, fry the masala ingredients, i.e., urad dal, red chillies (broken), coriander seeds, cumin seeds, and cinnamon.f finally switch off the flame and add poppy seeds.
  3. Cool the masala ingredients and grind it along with the desiccated coconut adding as much water required to form a thick smooth fine paste.
  4. Now add the ground masala paste, along with tamarind juice, jaggery and salt to the pineapple. Bring it to boil. Simmer for 10-15 minutes until the curry thickens.
  5. Taste the gravy and adjust the tamarind, salt and jaggery.
