About Punjabi Chole Masala Recipe

Every Punjabi household must have is this rasse wale chole masala.Kabuli chana boiled and cooked in typically masalas used in Punjab,ie kashmiri lal deghi mirch,dhaniya powder,zeera powder,aamchur,garam masala. With pinch of haldi for the gravy very loved pyaz tamater bhuna masala as base with adrak lahsun paste.Cooked with warmth and dedication in punjab these are very tasteful and healthy .

Punjabi Chole Masala

Ingredients to make Punjabi Chole Masala

  • 200 grams kabuli chana
  • 2 onions chopped fine
  • 2 big tomatoes grated
  • 1tblspn adrak lahsun paste
  • 1/2 tspn haldi
  • 1 tspn kashmiri mirch powder
  • 1/2 tspn black pepper powder
  • 1/2 tspn garsm masala
  • 1 tblspn dhaniya powder
  • 1tspn zeera powder
  • 1tspn aamchur
  • salt to taste
  • 1 tblspn desi ghee
  • Some hara dhaniya patta

How to make Punjabi Chole Masala

  1. Soak kabuli chana 8-10 hours /overnight,remove water wash well
  2. Add the swollen soaked chana in pressure cooker ,with 1tspn salt and 1 tspn adrak lehsun
  3. Boil 20 min open pressure and strain keeping water in separate bowl ,aside
  4. Chop onion fine,Grate tomatoes the spices in a plate lkeep ready
  5. Keep some ghee to heat
  6. Add onions chopped,saute
  7. Add haldi ,salt,1tspn adrak lahsun paste stir fry till onions soften
  8. Add all dry spices with grated tomato and stir fry well
  9. Roast fry masala well ,adding some water from boiled chole and add all boiled chole
  10. Stir cook well add boiled chole water as per curry required
  11. Give the chole 2 minutes boil to get masala to blend in
  12. Remove in serving bowl , garnish with corriander and green chillies

My Tip:

Wen soaking 8 -10 hrs boil for 15-18 min maximum Can use tamarind Imli/as instead of aamchur
