ABOUT Kashmiri Koftas RECIPE

This dish is a common household name in Jammu and Kashmir and is made with minced meat.

Ingredients Serving: 4

  1. Keema (minced meat- mutton) 500 gms.
  2. Full cream yogurt-2 cups thoroughly blended.
  3. Salt-2tsps.
  4. Black pepper-1/2 tsp.
  5. coriander powder-1tsp
  6. Saunf (crushed) -2tsp
  7. dried ginger -2tsp.
  8. Chopped green coriander leaves and 2-3 whole red chilies.

Instructions

  1. place the keema in a bowl and add 1/2 tsp of salt in it and mix it well
  2. Make small and round balls of keema(12-15)
  3. Place the meat balls on a plate and Heat them in the microwave oven for 3-4 mins, so that they become a bit firm.
  4. Heat 1/2a cup of cooking oil in a deep pan till it gets smoky.
  5. Add the Koftas or meat balls one by one in the oil and keep on turning them up and down with a stirring spoon.keep the stove on medium heat.
  6. Add the yogurts in the Koftas, stirring it gently.
  7. Put the rest of salt and all the masalas in the kofta sauce and stir it properly, then cover it.
  8. Let the curry boil,and continue cooking for about 15 mins. On a medium Heat.
  9. If the curry becomes thick, add one cup of boiling water to it, to give it a good consistency.The gravy shouldn't be very thick.
  10. Fry the whole red chilies in a little oil and pour it on top of the dish and add some finely chopped coriander leaves(dhania).
