Mawa Malpua with Lachchedar Rabadi

Ingredients Serving: 4

  1. 1 cup Mawa- crushed
  2. 1 cup Maida
  3. 2 cups lukewarm Milk
  4. 2 cups Sugar ( for making 1 strain  sugar syrup)
  5. 1 tsp cardamom powder
  6. 7-8 strains kesar( soaked in 2tbsp warm water)
  7. Desi Ghee- for deep frying (as required) 1tsp chopped pista for garnishing
  8. For making Rabadi..
  9. 1 li. Full cream milk
  10. 2 tbsp sugar(I prefer less sugar in Rabadi as malpua's are already soaked in sugar syrup)
  11. 1 tbsp dudh Masala
  12. 1/2 tsp cardamom powder

Instructions

  1. Method- mix Mawa in 1 cup milk with out any lumps, now as needed add maida & milk , mix well & make dosa consistency better.
  2. Heat sufficient Desi ghee in a flat bottom pan.
  3. Now pour batter slowly to make perfect round shape Malpua, let it cook on a slow medium flame till golden brown.
  4. On another gas, make 1 strain sugar syrup & add cardamom powder and saffron into that syrup.
  5. Put Golden brown Malpua in this sugar syrup & let them soaked for another 20 min.
  6. Meanwhile take heavy bottom pan & add full cream milk, continually stir , add sugar & cook untill​ it reduced 60% of actual quantity. Turn off gas & add dudh Masala , cardamom powder. Let it chill for some time.
  7. Now assemble Malpua in plate , sprinkle some pistachio & add spoon full of Rabadi.. it taste heavenly.. njoy it.. Happy Cooking :sunglasses::sunglasses:
