ABOUT Lauki Kofte RECIPE

A melt-in-the-mouth bottle gourd kofte in tomato gravy.

Ingredients Serving: 4

  1. For kofte 250 gm bottle gourd, grated
  2. 2 tablespoon corn flour
  3. 2 tablespoon gram flour /Besan
  4. 2 green chillies, chopped
  5. 1/4 cup coriander, chopped
  6. 1 teaspoon cumin seeds
  7. 1 teaspoon garam masala
  8. Salt to taste
  9. 1 teaspoon red chilly powder
  10. For Paste: 2 onions , roughly sliced 5-6 garlic cloves 1/2; ginger , roughly sliced 4 green chillies
  11. 2 cup tomato puree
  12. 1 teaspoon dried fenugreek leaves/ kasuri methi
  13. 1 teaspoon cumin seeds
  14. 1 teaspoon coriander powder
  15. 1 teaspoon turmeric powder
  16. 1 teaspoon garam masala
  17. 1 teaspoon red chilly powder
  18. Salt to taste
  19. vegetable oil , for frying
  20. 1/2 cup coriander leaves ,chopped
  21. 5 cups water or as required

Instructions

  1. Mix all the ingredients for Koftas in a bowl . Make small round balls of equal size. Heat oil in a wok, fry the Koftas from both sides.
  2. Drain on paper towel and set aside. Make a paste with onions, garlic and green chilli with the help of some water in food processor.
  3. Remove excess oil from the wok and you should be left with around 2 tablespoon oil in it. Add dried fenugreek leaves and cumin seeds. Saute for 1 minute.
  4. Add the paste to this, and add spices and salt. Mix well.
  5. Now add tomato puree and saute till the oil leaves the sides. Add water and let it boil for few minutes. Now add the koftas made earlier in the curry . Cook for few minutes.
  6. Serve and enjoy.
  7. Add the paste made above and saute; for 10-15 minutes on low heat till golden brown in color.
