Ingredients Serving: 4

  1. Mixed Vegetables - 2 cups (Carrots beans potato green peas cauliflower and sweet corn)
  2. Mint Leaves - 1 tbsp
  3. Onion - 1 medium thinly sliced
  4. Green Chillies - 2 sliced lengthwise Bay Leaf- 1
  5. Cloves - 3
  6. Cardamom - 2 crushed
  7. Cinnamon stick - 1 piece small
  8. Ghee- 2 tbsps
  9. Coriander- 3 tbsps chopped finely
  10. Red Chili Powder- 1 tsp (adjust as per taste)
  11. Garam Masala - 1 tsp (optional)
  12. Ginger Garlic Paste -1 tbsp
  13. Sugar - a pinch Salt - as per taste
  14. Rice/long grained or Basmati- 1 cup
  15. Water - 1 cup
  16. Coconut Milk - 1/2 cup

Instructions

  1. In a pressure cooker, add ghee along with cardamom, cloves, cinnamon stick and bay leaf. Saute until fragrant.
  2. Now add onions, green chilies, ginger-garlic paste and mint leaves. Fry until onions turn transparent.
  3. Drop in vegetables in to this and fry for 3 minutes. Add in salt, red chili powder and garam masala. Combine well. To this add rice, coconut milk and water. Stir and cook for 2 whistles.
  4. Gently stir rice, when the pressure settles down. Adjust salt, add chopped coriander leaves and 1 tbsp. ghee. Serve warm with raita or any curry.
  5. Alternatively you can even cook this in an electric cooker. Cooking in electric cooker helps you to check whether rice is getting cooked properly or not.
