Punjabi Bharwan Karela

Ingredients to make Punjabi Bharwan Karela

  • 3-4 Medium sized Karela (Bittergourd, peeled)
  • 2-3 Tablespoons of Peeled skin of karela
  • 1 onion sliced
  • 2-3 garlic Cloves + 1 inch Ginger chopped
  • 2 green chillies Chopped
  • Finely Chopped coriander Leaves
  • 1/2 Teaspoon turmeric Powder
  • 1 Teaspoon anardana powder ( Can be replaced with Aamchur powder )
  • 1 -1/2 Teaspoon Punjabi Garam masala
  • salt as per taste

How to make Punjabi Bharwan Karela

  1. Slit Each karela carefully and scoop out the pith and seeds.
  2. Soak karela in salted water for about 15- 20 minutes.
  3. Similarly apply / rub salt over peeled skin of karela and keep aside for sometime.
  4. Rinse karela and peeled skin well and drain excess water.
  5.  Pat dry karela using kitchen towel.
  6. In a mixer jar, combine onion, garlic, ginger, green chillies, coriander leaves and anardana powder and grind to coarse paste.
  7. Heat tablespoon of Oil in a pan and sauté this paste.
  8. Add Turmeric Powder, Punjabi Garam-masala and salt and stir till it becomes dry.
  9.  Keep aside to cool.
  10. Stuff the karelas with above mixture and tighten the karela with a clean thread.
  11. Heat oil in a pan and fry them on low heat.
  12. Once they start getting brown , remove them and in same pan add sliced onion. (This step is Optional)
  13. Once onion starts to get brown , add fried karelas and cook for another 5 minutes.
  14. Remove thread before serving.
  15. You can serve them as a side dish or can serve with Dal-Rice, Chapati
