ABOUT Zucchini Muffin RECIPE

Best way to trick adults and kids into having some zucchini and enjoy it too.

Ingredients Serving: 8

  1. 1/2 cup oil (I used canola)
  2. 3 eggs
  3. 1 1/3 cup sugar
  4. 1/2 cup orange juice
  5. 1 tsp vanilla extract
  6. 2 1/2 cup flour
  7. 1 tsp ground cinnamon (optional)
  8. 2 tsp baking soda
  9. 1/2 or 1 tsp salt
  10. 1/2 tsp ground cloves
  11. 1 1/2 cups shredded zucchini

Instructions

  1. Pre heat the oven at 350 degree centigrade.
  2. Combine oil, sugar, egg, orange juice and vanilla extract.
  3. Sift together all the dry ingredients. Combine the dry ingredients with the wet mixture.
  4. Stir in the grated zucchini. Do not over mix.
  5. Grease and line a muffin pan. Add in 3/4 cup batter in each muffin groove.
  6. Bake until a toothpick inserted in center comes out clean this takes about 20 to 25 minutes.
  7. Let it remain in the muffin tin to cool for 10 minutes before serving.
