ABOUT Malai kofta RECIPE

Malai kofta curry is a thick , creamy and delicious gravy with fried koftas. It is served with rice, naan or plain paratha.

Ingredients Serving: 4

  1. For kofta -
  2. 1 cup paneer crumbled
  3. 2 cup crumbled boiled potatoes
  4. 3 tbsp corn flour
  5. 1 tbsp raisins ( optional)
  6. 1 tbsp cashews ( optional)
  7. 1 tsp garam masala
  8. Salt as per taste
  9. 1 tsp ginger paste
  10. Oil for deep fring
  11. For gravy base -
  12. 1 cup onion
  13. 2 cup tomatoes
  14. 8 cashew nuts
  15. 1 inch cinnamon sticks
  16. 1 clove
  17. 1 big cardamom
  18. Other ingredients -
  19. Red chilli powder as per taste
  20. 1/2 tsp garam masala
  21. 1 tbsp ginger garlic paste
  22. 1 tsp coriander powder
  23. 1 tsp turmeric powder
  24. 1 cup water or used more
  25. 1/2 tsp kasuri methi
  26. 2 tbsp cream

Instructions

  1. Making gravy -
  2. Boil onion tomato, cashews , cardamom and cinnamon with half cup of water.
  3. Cool this mixer and blend this to a smooth puree.
  4. Heat a pan with oil, add bay leaves, cinnamon and cardamom. Saute for a minute.
  5. Add ginger garlic paste . Now pour the onion tomato puree and mix it well. Add chilli powder, garam masala, salt.
  6. Saute for 3-4 mins.
  7. Pour the water to make gravy. Cook covered until gravy thickens.
  8. Add kasuri methi and salt and spices.
  9. And at last add cream. And turn off flame. Set this aside.
  10. Making kofta-
  11. Boil potatoes until just done and not mushy.
  12. Crumble them and add to the bowl along with crumbled paneer, ginger paste, corn flour, salt, garam masala and chopped coriander leaves.
  13. Now start making kofta and Stuff raisins and cashews in kofta.
  14. Deep fry in hot oil on medium flame until crisp and golden.
  15. Transfer gravy to a serving dish.
  16. Garnish with cream and coriander leaves.
