ABOUT Stuffed karela ( bitter gourd ) RECIPE

This is a very tasty punjabi dish . Blend of few spices stuffed in karela and then deep frying it makes it irresistible .

Ingredients Serving: 6

  1. 1/2 kg karela
  2. 5-6 small sizes onions ( peeled washed and make one horizontal and one vertical cut in them but not all the way through )
  3. 1 and 1/2 tsp - salt
  4. 1 tbsp - turmeric powder ( haldi )
  5. 1 tbsp - amchur powder ( dry mango powder)
  6. 1/2 tsp - Chilli powder
  7. 1 tsp - garam masala powder
  8. 1 tsp - saunf powder ( fennel powder )
  9. Mustard oil for shallow frying

Instructions

  1. Wash and peel the karelas
  2. Slit them from the centre
  3. Now remove all its seeds if there are any . The ones i had bought were very tender and fresh without any hard seeds .
  4. Wash the karelas thoroughly and keep them in a colander till the water drains .
  5. In a bowl add salt, turmeric , Saunf powder, Amchur powder , garam masala powder , and red chilly powder and mix them well .
  6. Fill all the karela and onions with this mixture .
  7. In a kadahi heat mustard oil .
  8. Put the karela in it carefully , cover with a lid and cook .
  9. Once it becomes soft turn the flame on high and let them turn dark brown in colour .
  10. Remove the karelas in a serving dish.
  11. Now in the same oil add the onions . Cover them and cook for a few minutes .
  12. Put the flame off and transfer the onions into a serving dish .
  13. Serve with chapatis . Goes great with moong ki dhuli daal and any raita .
